Our favorite weeknight dinner!! Sweet potato nachos as we call them. Slice and cook your sweet potatoes at 425° (I would not recommend doing this with a baby attached to you but sometimes you do what you gotta do) season with some paprika, garlic powder, salt & pepper. Cook your ground beef then season with taco seasoning, I love to add a can of black beans to ours. We will eat the rest throughout the week with extra sweet potatoes or over rice.
