Elevate your next chicken dinner with Abigail Donnelly’s pollo al mattone. This marinated spatchcocked chicken is roasted to perfection under a cast-iron pan, with juicy, flavourful results. Paired with a refreshing nectarine salsa, it’s a celebration of summer’s best, especially while stone fruit is in season. Looking for a healthy and flavourful addition to the menu? Look no further than ‘Chicken Under A Brick’ also know as “Pollo Al Mattone”. This when whole chicken is spatchcock seasoned, and then cooked with a brick pressing down on it. The weight of the brick helps to sear the skin and cook the chicken evenly. 🍗🥔🥕 Add this to your Sunday lunch time menu, see the recipe link below. https://foodloversmarket.co.za/recipe/herbed-chicken-under-brick #foodloversmarket #bestinfresh #recipes #chicken

Una piel crujiente y dorada, y una carne jugosa y llena de sabor. Yo lo hice en una sartén de acero inoxidable, que ayuda a conseguir ese dorado perfecto y deja un fondo lleno de jugos que, al desglasa
